  • 4 bone-in, skin-on chicken thighs
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Pat dry the chicken thighs and season both sides generously with salt, pepper, and thyme.
  3. In a large oven-safe skillet over medium-high heat, melt the butter until bubbly. Sear the chicken thighs skin-side down for about 6-7 minutes until golden brown. Flip and sear the other side for another few minutes.
  4. Remove the chicken temporarily. Add sliced mushrooms to the skillet and sauté for about 5 minutes until browned.
  5. Stir in minced garlic and cook for an additional minute until fragrant. Pour in heavy cream while stirring to combine.
  6. Return the chicken thighs to the skillet, spooning some sauce over them. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches at least 165°F (75°C). Serve drizzled with sauce.
