- 4 bone-in, skin-on chicken thighs
- 8 oz fresh cremini or button mushrooms, sliced
- 1 cup heavy cream
- 4 garlic cloves, minced
- 2 tbsp butter
- Salt and pepper to taste
- 1 tsp dried thyme
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Pat dry the chicken thighs and season both sides generously with salt, pepper, and thyme.
- In a large oven-safe skillet over medium-high heat, melt the butter until bubbly. Sear the chicken thighs skin-side down for about 6-7 minutes until golden brown. Flip and sear the other side for another few minutes.
- Remove the chicken temporarily. Add sliced mushrooms to the skillet and sauté for about 5 minutes until browned.
- Stir in minced garlic and cook for an additional minute until fragrant. Pour in heavy cream while stirring to combine.
- Return the chicken thighs to the skillet, spooning some sauce over them. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches at least 165°F (75°C). Serve drizzled with sauce.
