Ingredients
1 pound boneless skinless chicken thighs
1 can (13.5 ounces) full-fat coconut milk
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon turmeric
½ teaspoon chili powder
Fresh cilantro or parsley for garnish
Olive oil for cooking
Instructions
1. Marinate the chicken by mixing olive oil, garlic, ginger, coriander, turmeric, chili powder, salt, and pepper in a bowl. Coat the chicken and refrigerate for at least 30 minutes.
2. Heat olive oil in a skillet over medium-high heat and sear the marinated chicken for about 4-5 minutes on each side until golden brown. Remove and set aside.
3. In the same skillet, pour in coconut milk and bring to a simmer while scraping any browned bits from the pan. Return chicken to the skillet and simmer covered for about 10 minutes.
4. Serve hot over jasmine rice or quinoa, garnished with fresh herbs.
Notes
For added flavor variations, consider incorporating lime juice or adding chopped vegetables like bell peppers during the simmering stage. This recipe is also adaptable; swap out chicken thighs for breasts if desired.
