- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
- 6 cups low-sodium chicken broth
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves fresh garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by dicing the carrots and celery, and mincing the garlic.
- In a large pot over medium heat, add olive oil. Sauté the carrots and celery for about 4-5 minutes until softened. Add minced garlic and sauté for an additional minute.
- Add boneless chicken breasts to the pot; sauté until golden brown on both sides (about 5 minutes).
- Pour in chicken broth and add the drained white beans. Bring to a gentle simmer.
- Season with thyme, salt, and pepper; let simmer for 20-25 minutes until chicken is cooked through.
- Remove chicken from the pot, shred it into bite-sized pieces, and return it to the soup. Serve hot.
