  • 1 ½ cups roasted butternut squash (cubed)
  • ½ cup dried cranberries
  • ¾ cup toasted pecans
  • ½ cup crumbled feta cheese
  • ⅓ cup balsamic vinaigrette

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube the butternut squash, toss with olive oil, salt, and pepper, then spread on a baking sheet.
  2. Roast squash for 20-25 minutes until tender and caramelized.
  3. Chop mixed greens into bite-sized pieces.
  4. In a large bowl, combine chopped greens with cooled roasted squash, cranberries, and pecans.
