  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies: Dice the onion, carrots, and celery to create a mirepoix.
  2. Sauté the base: In a large pot over medium heat, add olive oil and sauté onions until translucent. Add garlic, carrots, and celery; cook until softened.
  3. Add lentils and tomatoes: Stir in lentils and diced tomatoes (with juice).
  4. Simmer: Pour in vegetable broth to cover the mixture by an inch. Add spices (cumin, thyme, bay leaf), bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  5. Add greens: Stir in spinach or kale towards the end of cooking until wilted.
  6. Final touches: Season with salt and pepper before serving hot.
