  • 1 medium onion, finely chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes). Stir in minced garlic, diced carrots, and celery; cook for another 3 minutes.
  2. Add rinsed lentils and mix well. Pour in vegetable broth and bring to a boil.
  3. Reduce heat to low; season with thyme, salt, and pepper. Simmer uncovered for about 30 minutes or until lentils are tender.
  4. For a smoother texture, blend part of the soup with an immersion blender or transfer half to a traditional blender before serving.
  5. Serve hot with crusty bread or croutons.
