Ingredients

  • 2 lbs fresh tomatoes, chopped
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 cup fresh basil leaves (divided)
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Sauté the onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Transfer sautéed onion and garlic to the slow cooker along with chopped tomatoes, vegetable broth, sugar, half of the basil, salt, and pepper. Stir well.
  3. Cook on low for 6 hours or high for 3 hours until flavors meld.
  4. Blend the soup until smooth using an immersion blender or a regular blender in batches.
  5. Stir in remaining basil before serving.
