Description

  • 1 cup long-grain rice (jasmine or basmati)
  • 2 cups wild mushrooms (shiitake, oyster, cremini), sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 3 tbsp unsalted butter
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced wild mushrooms, minced garlic, and chopped onion. Sauté for about 5 minutes until golden brown.
  2. Push the mushroom mixture to one side and add another tablespoon of butter. Stir in the rice and toast for 2 minutes until slightly golden.
  3. Pour in the vegetable broth and stir to combine all ingredients.
  4. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 20 minutes until liquid is absorbed and rice is tender.
  5. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
