Ingredients

  • 2 lbs Russet or Yukon Gold potatoes
  • 2 large sweet onions
  • 4 tbsp unsalted butter (divided)
  • 1/2 cup heavy cream
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Peel and chop the potatoes into large chunks. Rinse under cold water to remove excess starch.
  2. In a large pot, cover the potato chunks with cold water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  3. While the potatoes are boiling, melt 2 tablespoons of butter in a skillet over medium heat. Slice the onions and sauté until soft and golden brown, about 15 minutes.
  4. Drain the cooked potatoes and return them to the pot. Add remaining butter and heavy cream. Mash until smooth and creamy.
  5. Fold in the caramelized onions, seasoning with salt and pepper to taste.
  6. Serve warm in a bowl, garnished with fresh herbs if desired.
