- 2 lbs Russet or Yukon Gold potatoes
- 2 large sweet onions
- 4 tbsp unsalted butter (divided)
- 1/2 cup heavy cream
- Salt, to taste
- Pepper, to taste
Instructions
- Peel and chop the potatoes into large chunks. Rinse under cold water to remove excess starch.
- In a large pot, cover the potato chunks with cold water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- While the potatoes are boiling, melt 2 tablespoons of butter in a skillet over medium heat. Slice the onions and sauté until soft and golden brown, about 15 minutes.
- Drain the cooked potatoes and return them to the pot. Add remaining butter and heavy cream. Mash until smooth and creamy.
- Fold in the caramelized onions, seasoning with salt and pepper to taste.
- Serve warm in a bowl, garnished with fresh herbs if desired.
