- 2 tbsp olive oil for frying
Instructions
- Grate zucchini and squeeze out excess moisture using a kitchen towel.
- In a large bowl, mix flour, salt, pepper, and Parmesan cheese.
- In another bowl, whisk eggs and mix in grated zucchini and herbs.
- Combine dry ingredients with wet mixture until just combined.
- Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
- Cook for about 3 minutes on each side until golden brown. Drain on paper towels.
