Description

Zucchini fritters are a deliciously crispy way to enjoy fresh summer squash. Ingredients

  • 2 medium zucchinis (about 400g), grated
  • 1 cup all-purpose flour (120g)
  • 2 large eggs
  • ½ cup grated Parmesan cheese (50g)
  • ¼ cup fresh parsley or dill, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil for frying

Instructions

  1. Grate zucchini and squeeze out excess moisture using a kitchen towel.
  2. In a large bowl, mix flour, salt, pepper, and Parmesan cheese.
  3. In another bowl, whisk eggs and mix in grated zucchini and herbs.
  4. Combine dry ingredients with wet mixture until just combined.
  5. Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  6. Cook for about 3 minutes on each side until golden brown. Drain on paper towels.
