Instructions
- Grate the zucchini and squeeze out excess moisture using a kitchen towel.

- In another bowl, beat the eggs then add to the dry mixture along with green onions. Stir until combined.
- Fold in grated zucchini until evenly mixed.

- Fry for about 3-4 minutes on each side until golden brown. Transfer to paper towels to drain excess oil.
