- 1 packet taco seasoning (about 1 oz)
- 1 can black beans (15 oz), rinsed
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- 2 cups lettuce (romaine or iceberg), chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream or Greek yogurt
- Juice of 1 lime
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Add taco seasoning according to package instructions and drain excess fat.
- Rinse black beans, chop cherry tomatoes and lettuce, and dice the avocado.
- In mason jars, layer cooked meat, black beans, tomatoes, lettuce, cheese, and avocado in that order.
- In a small bowl, mix sour cream with lime juice until smooth; drizzle over the layers.
