  • 1 lb lean ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can black beans (15 oz), rinsed
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 2 cups lettuce (romaine or iceberg), chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime

Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Add taco seasoning according to package instructions and drain excess fat.
  2. Rinse black beans, chop cherry tomatoes and lettuce, and dice the avocado.
  3. In mason jars, layer cooked meat, black beans, tomatoes, lettuce, cheese, and avocado in that order.
  4. In a small bowl, mix sour cream with lime juice until smooth; drizzle over the layers.
  5. Seal jars tightly and shake gently before enjoying if desired.
