Ingredients
- 1 medium head of cauliflower (riced)
- 1 cup firm tofu (pressed and cubed)

- 2 green onions (chopped)
- 2 cloves garlic (minced)
- 1 inch fresh ginger (grated)
Instructions
- Rice the cauliflower using a food processor or grater until it resembles grains of rice. Press the tofu to remove excess moisture.
- In a large skillet or wok over medium heat, add a splash of oil and sauté the cubed tofu until golden brown on all sides (about 5-7 minutes).
- Push the tofu aside, add minced garlic and grated ginger, and sauté for about one minute until fragrant.
- Stir in chopped carrots and peas; cook until tender-crisp (about 3 minutes).
- Add riced cauliflower along with soy sauce and sesame oil. Mix well and cook for another five minutes until heated through.
