Ingredients
- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 pound baby or Yukon gold potatoes, halved
- 3 tablespoons extra virgin olive oil
- 1 teaspoon dried Italian herbs (oregano and basil)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season the chicken breasts with salt and pepper on both sides.
- In a bowl, mix minced garlic, grated Parmesan, olive oil, and herbs until combined.
