Ingredients

  • 4 cups fresh kale, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp extra virgin olive oil, divided
  • 1/4 cup freshly grated Parmesan cheese (or nutritional yeast for vegan)
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat chickpeas dry, toss with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until golden and crispy.
  3. While chickpeas roast, massage chopped kale with remaining olive oil and a pinch of salt until softened.
  4. In a bowl, whisk together garlic, Dijon mustard, lemon juice, Parmesan cheese (or nutritional yeast), and remaining olive oil until smooth.
  5. Combine massaged kale with roasted chickpeas and dressing; toss well before serving.
