Ingredients
- 1 cup fresh strawberries, hulled
- 1 cup fresh blueberries
- 1 cup full-fat coconut milk
- 2 tablespoons honey or maple syrup (to taste)
- 1 tablespoon lemon juice
Instructions
- Wash all fruits thoroughly.
- Blend strawberries with half of the coconut milk until smooth; sweeten with honey or maple syrup to taste. Pour into popsicle molds, filling each about one-third full, and freeze for 1 hour.
- Blend blueberries with remaining coconut milk and sweetener if desired; pour over the partially frozen strawberry layer until filled halfway. Freeze for another hour.
- Blend remaining coconut milk with lemon juice; pour over the blueberry layer, insert sticks, and freeze overnight or at least for 4 hours.
- To serve, run warm water over the outside of the molds before gently pulling out your popsicles.
