Description

Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup (to taste)
  • 1 tablespoon lemon juice

Instructions

  1. Wash all fruits thoroughly.
  2. Blend strawberries with half of the coconut milk until smooth; sweeten with honey or maple syrup to taste. Pour into popsicle molds, filling each about one-third full, and freeze for 1 hour.
  3. Blend blueberries with remaining coconut milk and sweetener if desired; pour over the partially frozen strawberry layer until filled halfway. Freeze for another hour.
  4. Blend remaining coconut milk with lemon juice; pour over the blueberry layer, insert sticks, and freeze overnight or at least for 4 hours.
  5. To serve, run warm water over the outside of the molds before gently pulling out your popsicles.
