  • 8 oz penne pasta
  • 2 cups baby spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente (about 8-10 minutes). Drain and cool.
  2. While pasta cools, rinse spinach and chop tomatoes and red onion.
  3. In a mixing bowl, combine cooled pasta, spinach, artichokes, tomatoes, and onion.
  4. In another bowl, whisk together mayonnaise (or yogurt), Parmesan cheese, garlic powder, lemon juice, salt, and pepper.
  5. Pour dressing over the pasta mixture and toss gently until well coated.
  6. Chill in the refrigerator for at least one hour before serving.
