  • 2 large sweet potatoes (about 500g), peeled and cubed
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 whole wheat tortillas
  • 1 small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped (optional)
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potatoes with olive oil and salt; spread on a baking sheet. Roast for 25-30 minutes until tender.
  2. In a small pot, combine black beans with lime juice and red onion; heat over medium heat for about 5 minutes.
  3. Assemble the wrap: place roasted sweet potatoes in the center of each tortilla, top with black bean mixture and cilantro.
  4. Roll tightly to enclose the filling; secure with a toothpick if needed.
