  • 1 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for 45-60 minutes until fork-tender. Allow to cool, then peel and dice into bite-sized pieces.
  2. While beets roast, toast walnuts in a dry skillet over medium heat for 5-7 minutes until golden brown and fragrant.
  3. In a large bowl, combine diced beets, crumbled feta, toasted walnuts, and chopped herbs.
  4. Drizzle with olive oil and balsamic vinegar; season with salt and pepper to taste.
