- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 cup cooked white or brown rice
- 1 cup mixed vegetables (broccoli, carrots, bell peppers)
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp oil for cooking
Instructions
- Cook rice according to package instructions.
- In a small bowl, whisk together soy sauce, brown sugar, garlic, and ginger to make the teriyaki glaze.
- Heat oil in a nonstick skillet over medium-high heat. Add salmon fillets skin-side down and cook for 4-5 minutes until golden brown.
- Flip the salmon and drizzle teriyaki sauce on top. Cook for an additional 4-5 minutes until fully cooked.
- Sauté mixed vegetables in another pan until tender-crisp (about 3-4 minutes).
- Assemble bowls by adding rice topped with salmon and veggies. Drizzle with remaining teriyaki sauce before serving.
