- 1 cup long-grain white rice
- 1 smoked ham hock (or 4 oz diced bacon)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- ½ tsp cayenne pepper
- 1 tbsp olive oil
Instructions
- Rinse and soak dried black-eyed peas overnight; if using canned peas, rinse under cool water.
- Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Stir in the smoked ham hock or bacon; cook for about 2 minutes.
- Add the black-eyed peas and chicken broth to the pot; bring to a simmer for about 10 minutes.
- Stir in the rice and cayenne pepper. Cover the pot, reduce heat to low, and let it steam for about 20 minutes or until liquid is absorbed.
- Remove from heat, let sit covered for another 5 minutes. Shred any ham from the hock back into the dish, fluff rice with a fork, and serve hot.
