- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 4 sheets phyllo dough
- 2 tbsp olive oil (for sautéing)
- Fresh parsley or cilantro (for garnish)
Instructions
- Rinse lentils under cold water until clear. In a pot, combine with 4 cups water and bring to a boil. Simmer for 20 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent (about 5 minutes).
- Add diced carrot, cumin, and cinnamon. Stir for another 5 minutes.
- Drain lentils and mix them into the skillet with the vegetable mixture. Combine thoroughly.
- Preheat oven to 375°F (190°C). Grease a baking dish and layer two sheets of phyllo dough brushed with olive oil at the bottom. Add the lentil mixture on top and fold over extra dough.
- Cover with additional phyllo layers brushed with olive oil and bake for 35 minutes until golden brown.
