  • 3 tbsp high-quality balsamic vinegar
  • 2 tbsp raw honey
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the beets thoroughly. Trim off the tops and tails while keeping the skins on.
  3. Slice the beets into wedges or rounds, then toss them in a mixing bowl with olive oil, salt, and pepper until evenly coated.
  4. In a separate small bowl, whisk together balsamic vinegar and honey. Drizzle over the beets and toss to coat.
  5. Spread the glazed beets on the prepared baking sheet in a single layer. Roast for 25-30 minutes or until fork-tender.
