  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 red bell peppers, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cut the chicken into strips and combine it in a bowl with olive oil and half of the taco seasoning. Mix until well-coated.
  3. Add the sliced peppers and red onion to the bowl along with the remaining taco seasoning. Toss to combine.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Roast in the oven for 20-25 minutes or until cooked through and slightly caramelized.
  6. Squeeze fresh lime juice over the fajitas before serving.
