Ingredients

  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • 1 small red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water in a fine-mesh strainer to remove bitterness. Cook according to package instructions (generally, bring 2 cups of water to a boil, add quinoa, cover and simmer for about 15 minutes).
  2. While the quinoa cooks, chop the cherry tomatoes, cucumber, and slice the red onion.
  3. In a large bowl, combine the cooked quinoa with chopped veggies and crumbled feta.
  4. In a separate bowl or jar, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  5. Drizzle the dressing over the quinoa mixture and gently toss to combine.
  6. Serve in individual bowls or platters; garnish with extra feta or fresh herbs if desired.
