  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 cup bell peppers (chopped, mixed colors)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice sweet potatoes into small cubes. Chop bell peppers, onion, and garlic finely.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic for about 2 minutes until fragrant.
  3. Add ground beef, breaking it apart with a wooden spoon. Cook until browned, approximately 5 minutes.
  4. Stir in cumin and chili powder during the last minute of cooking.
  5. Add diced sweet potatoes along with a splash of water or broth. Cover and steam for about 10 minutes until tender.
  6. Mix in bell peppers and cook uncovered for another 5 minutes until everything is well combined.
  7. Serve warm, optionally garnished with fresh cilantro or avocado slices.
