- 1 red bell pepper, chopped

- 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
- 4 large eggs
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste

Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté until tender, about 5 minutes.
- Stir in minced garlic, cumin, and paprika; cook until fragrant, about 1 minute.

- Create wells in the sauce with a spoon and crack an egg into each well. Cover and cook until egg whites are set but yolks are runny, about 6-8 minutes.
