  • 1 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  1. Chop the onions, carrots, and celery into bite-sized pieces.
  2. In a large pot over medium heat, add a splash of oil and brown the cubed beef chuck roast on all sides.
  3. Add the chopped onions, carrots, and celery to the pot; sauté until softened (about 5 minutes).
  4. Stir in minced garlic, dried thyme, and bay leaves until fragrant.
  5. Pour in the beef broth and bring to a boil; then add pearl barley. Cover and simmer on low heat for about an hour or until the beef is fork-tender.
  6. Remove bay leaves before serving and garnish with fresh herbs if desired.
