  • 3/4 cup hulled barley
  • 2 medium carrots (chopped)
  • 2 celery stalks (chopped)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium beef broth
  • 2 dried bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery; sauté until softened (about 5 minutes).
  2. Add beef chunks to the pot and brown on all sides for approximately 8 minutes.
  3. Stir in minced garlic, thyme, and bay leaves; cook for an additional minute until fragrant.
  4. Pour in beef broth while scraping the bottom of the pot to deglaze. Bring to a gentle boil.
  5. Stir in hulled barley, reduce heat to low, cover, and simmer for about 60 minutes or until beef and barley are tender.
  6. Taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
