- 4 slices cooked bacon, crumbled (or turkey bacon)
- 2 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
Instructions
- In a large pot over medium heat, sauté the crumbled bacon until crispy. Remove bacon but leave drippings. Add chopped onion and minced garlic; sauté until softened.
- Stir in diced potatoes and cook for about five minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer until potatoes are tender (approximately ten minutes).
- Add corn and thyme; simmer for another five minutes.
- Blend half of the mixture using an immersion blender or regular blender for a smoother texture while keeping some chunks intact.
- Return blended chowder to pot (if using regular blender), stir in heavy cream, season with salt and pepper, and heat through without boiling. Serve hot.
