  • 1 pre-made pie crust (9 inches)
  • 2 cups heavy cream
  • 3/4 cup granulated sugar, divided
  • 5 large egg yolks
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Fit the pie crust into a pie dish and crimp the edges.
  2. In a saucepan over low heat, warm heavy cream with half of the sugar until hot but not boiling. Remove from heat and stir in vanilla extract.
  3. In a bowl, whisk egg yolks and remaining sugar until pale. Gradually add the warm cream while whisking continuously to prevent scrambling.
  4. Pour the filling into the crust and bake for 30-35 minutes until slightly jiggly in the center.
  5. Cool at room temperature for 1 hour, then refrigerate for at least 2 hours.
  6. Before serving, sprinkle an even layer of sugar on top and caramelize using a kitchen torch or broiler.
