- 12 fresh oysters
- 4 tbsp unsalted butter
- 2 cloves garlic, finely chopped
- 2 shallots, finely diced
- 1 cup fresh spinach, chopped
- 2 tbsp Pernod or anise liqueur
- ½ cup panko breadcrumbs
- ½ cup grated Parmesan cheese
Instructions
- Preheat oven to 450°F (230°C).
- Carefully shuck the oysters and place them on a baking sheet lined with rock salt.
- In a skillet over medium heat, melt butter. Sauté garlic and shallots until fragrant (about 2 minutes).
- Stir in chopped spinach until wilted. Add Pernod; season with salt and pepper.
- Mix in panko breadcrumbs and half of the Parmesan until well combined.
- Spoon the mixture onto each oyster; top with remaining Parmesan.
- Bake for 10 minutes or until golden brown.
