  • 12 fresh oysters
  • 4 tbsp unsalted butter
  • 2 cloves garlic, finely chopped
  • 2 shallots, finely diced
  • 1 cup fresh spinach, chopped
  • 2 tbsp Pernod or anise liqueur
  • ½ cup panko breadcrumbs
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Carefully shuck the oysters and place them on a baking sheet lined with rock salt.
  3. In a skillet over medium heat, melt butter. Sauté garlic and shallots until fragrant (about 2 minutes).
  4. Stir in chopped spinach until wilted. Add Pernod; season with salt and pepper.
  5. Mix in panko breadcrumbs and half of the Parmesan until well combined.
  6. Spoon the mixture onto each oyster; top with remaining Parmesan.
  7. Bake for 10 minutes or until golden brown.
