  • 2 shallots, finely chopped
  • 2 tbsp brandy or cognac
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 3 gelatin sheets

Instructions

  1. Soak foie gras in milk for 2 hours to mellow flavors.
  2. Finely chop shallots while the foie gras soaks.
  3. Drain foie gras and combine with shallots, brandy, salt, and pepper in a mixing bowl. Mix gently.
  4. Soak gelatin sheets in cold water until soft; squeeze out excess water and mix into the foie gras mixture.
  5. Line a terrine mold with plastic wrap and fill it with the foie gras mixture, smoothing the top. Cover tightly with plastic wrap.
  6. Chill in the refrigerator for at least 8 hours or overnight until set. Unmold onto a serving platter.
