  • 1 lb boneless skinless chicken breasts
  • 1 cup bell peppers (red and yellow, sliced)
  • 1 cup zucchini (sliced into bite-sized pieces)
  • 4 cloves fresh garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey
  • Black pepper (to taste)

Instructions

  1. Wash and chop the vegetables; cut chicken into cubes.
  2. In a bowl, mix soy sauce, sesame oil, honey, minced garlic, and black pepper. Add chicken cubes and marinate for 15 minutes.
  3. Preheat the air fryer to 400°F (200°C).
  4. Place marinated chicken in the air fryer basket in a single layer; top with bell peppers and zucchini.
  5. Cook at 400°F (200°C) for 10-12 minutes, shaking halfway through until chicken is golden brown and cooked through.
