Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 3 cups fresh apples, peeled and sliced (preferably Granny Smith)
  • 1 tsp ground cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat oven to 325°F (160°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press into the bottom of the pan.
  3. In another bowl, beat cream cheese and sour cream until smooth. Gradually add remaining sugar and mix in eggs one at a time.
  4. Fold in sliced apples and cinnamon gently into the mixture. Pour over crust.
  5. Bake for 50-60 minutes until slightly firm but still jiggly in the center. Cool completely before removing from pan.
