Description

Apple Crisp Cheesecakes are a delightful blend of creamy cheesecake and spiced apples with a crunchy oat topping, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 16 oz cream cheese (softened)
  • 1 cup sour cream (full-fat)
  • 2 large eggs (room temperature)
  • 3 cups Granny Smith apples (peeled, cored, thinly sliced)
  • 1 tsp ground cinnamon
  • ½ cup brown sugar (packed)
  • 1 cup old-fashioned oats
  • ⅓ cup all-purpose flour
  • Additional ¼ cup unsalted butter (melted)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl; press into the bottom of individual springform pans or muffin tins.
  2. In another bowl, beat cream cheese and sour cream until smooth. Gradually mix in granulated sugar and eggs until silky.
  3. In a skillet over medium heat, toss sliced apples with brown sugar and cinnamon until slightly softened; set aside.
  4. Pour half of the cheesecake batter over each crust layer. Spoon apple filling on top and finish with remaining batter.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center; cool completely before removing from pans.
  6. For the topping, mix oats with flour, cinnamon, and melted butter until crumbly. Sprinkle over cooled cheesecakes and bake at 400°F (200°C) for an additional 10 minutes until golden.
