- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
- ½ cup granulated sugar
- 16 oz cream cheese (softened)
- 1 cup sour cream (full-fat)
- 2 large eggs (room temperature)
- 3 cups Granny Smith apples (peeled, cored, thinly sliced)
- 1 tsp ground cinnamon
- ½ cup brown sugar (packed)
- 1 cup old-fashioned oats
- ⅓ cup all-purpose flour
- Additional ¼ cup unsalted butter (melted)
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl; press into the bottom of individual springform pans or muffin tins.
- In another bowl, beat cream cheese and sour cream until smooth. Gradually mix in granulated sugar and eggs until silky.
- In a skillet over medium heat, toss sliced apples with brown sugar and cinnamon until slightly softened; set aside.
- Pour half of the cheesecake batter over each crust layer. Spoon apple filling on top and finish with remaining batter.
- Bake for 30-35 minutes until set but slightly jiggly in the center; cool completely before removing from pans.
- For the topping, mix oats with flour, cinnamon, and melted butter until crumbly. Sprinkle over cooled cheesecakes and bake at 400°F (200°C) for an additional 10 minutes until golden.
