Instructions
- Preheat the oven to 350°F (175°C) and line muffin tins with cupcake liners.
- In a bowl, mix flour, sugar, baking powder, cinnamon, and salt. In another bowl, cream the butter until fluffy, then add eggs one at a time and vanilla. Combine the wet and dry ingredients.
- Toss apples in lemon juice, brown sugar, and cinnamon. Fold the apple mixture into the batter.
- Fill each cupcake liner two-thirds full with batter. Bake for 20–25 minutes or until a toothpick comes out clean. Cool completely before frosting.
- For the frosting, beat cream cheese, powdered sugar, and heavy cream until smooth. Frost cooled cupcakes.
