  • 8 oz burrata cheese

  • 2 tbsp extra virgin olive oil
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. In a large skillet over medium heat, add olive oil and garlic; sauté until fragrant (about 1 minute). Add spinach and cook until wilted.
  3. In a mixing bowl, combine cooked gnocchi with sautéed spinach. Season with salt and pepper; mix in Parmesan if desired.
