  • 8 slices brioche or challah bread (about 8 oz)
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 cup maple syrup

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cut the bread into one-inch cubes and place them in the prepared baking dish.
  3. In a mixing bowl, whisk together eggs, milk, vanilla, cinnamon, and maple syrup until smooth.
  4. Pour the custard mixture evenly over the bread cubes and gently press down to ensure soaking.
  5. Scatter fresh berries over the top of the mixture.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
