  • 2 lbs butternut squash, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1 cup panko breadcrumbs
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp nutmeg

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Toss diced butternut squash with salt and pepper, spread on a baking sheet, and roast for about 25 minutes until fork-tender.
  3. In a bowl, combine roasted squash, heavy cream, half of the cheddar and mozzarella, nutmeg, and additional salt and pepper; mix well.
  4. Pour the mixture into the prepared baking dish. Top with remaining cheese and sprinkle panko breadcrumbs evenly over the top.
  5. Bake for 30-35 minutes until bubbly and golden brown.
