- 1 medium butternut squash (about 2 cups roasted)
- 8 oz fresh goat cheese
- 2 tbsp extra virgin olive oil
- 1 tsp fresh rosemary, finely chopped
- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the butternut squash in half lengthwise, scoop out the seeds, brush with olive oil, and season with salt and pepper. Place cut-side down on the baking sheet and roast for 30 minutes or until tender.
- While the squash roasts, mince garlic and chop rosemary.
- Once cooled slightly, scoop out the flesh of the squash into a mixing bowl. Add goat cheese, garlic, rosemary, and remaining olive oil.
- Blend until smooth using an immersion blender or food processor. Taste and adjust seasoning if needed.
- Serve in a bowl drizzled with olive oil alongside crackers or fresh veggies.
