- 1 medium head cauliflower (about 600g), cut into florets
- 1 cup (100g) Gruyere cheese, grated
- 1 cup (240ml) heavy cream
- 2 tbsp (30g) unsalted butter
- 2 cloves garlic, minced
- ½ cup (50g) panko breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Blanch the cauliflower florets in boiling salted water for about 5 minutes until slightly tender; drain well.
- In a saucepan, melt the butter over medium heat and sauté the garlic for about 2 minutes. Add the heavy cream and bring to a simmer. Stir in half of the Gruyere cheese along with salt and pepper until melted.
- Layer the blanched cauliflower in the baking dish, pour over the cheese sauce, then top with remaining Gruyere cheese and breadcrumbs.
- Bake for 25-30 minutes until golden brown and bubbly. Let cool slightly before serving.
