- 2 boneless, skinless chicken breasts (approximately 1 lb)
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 1 cup bell peppers (diced)
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 egg (beaten for egg wash)
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper. Bake for 25-30 minutes until cooked through; shred with two forks.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and diced bell peppers; cook until softened.
- Mix shredded chicken with sautéed vegetables and spices in a large bowl.
- Roll out dough on a floured surface. Cut circles about six inches in diameter. Place filling in the center of each circle, fold over to form half-moons, sealing edges by crimping with a fork.
- Arrange empanadas on a parchment-lined baking sheet, brush tops with egg wash. Bake for 20-25 minutes until golden brown.
