- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- For the brownie base: In a bowl, mix melted butter with granulated and brown sugars until smooth. Add eggs one at a time, mixing well. Sift together flour and cocoa powder; fold into wet ingredients until just combined. Gently fold in half of the chocolate chips. Pour into the prepared pan.
- For the cookie layer: In another bowl, cream softened butter with sugars until fluffy. Add eggs one at a time, then gradually incorporate flour until soft dough forms. Fold in remaining chocolate chips and spread over the brownie layer.
- Bake for 25-30 minutes or until a toothpick comes out mostly clean.
- While baking, whip coconut cream with powdered sugar until fluffy. After brookies cool slightly, spread coconut cream on top.
