  • 8 oz fettuccine or penne pasta
  • 2 cups fresh baby spinach
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and reserve 1 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil and sauté mushrooms until golden brown (about 5 minutes). Add garlic and cook for another minute.
  3. Stir in the spinach until wilted (about 2 minutes).
  4. Pour in heavy cream and bring to a gentle simmer. Gradually add Parmesan cheese until melted.
  5. Combine the cooked pasta with the sauce, tossing gently to coat. Adjust consistency with reserved pasta water if needed.
