Description

Easter Bird’s Nest Cookies are a delightful springtime treat that combines chewy cookie goodness with vibrant candy eggs, perfect for celebrating the season.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk)
  • 1 cup unsweetened coconut flakes
  • 1 cup candy eggs (mini chocolate or jelly beans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In another bowl, cream together butter, granulated sugar, brown sugar, and vanilla until light and fluffy.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed. Fold in chocolate chips.
  5. Scoop tablespoon-sized dough onto the baking sheets and create an indent in each. Bake for about 10 minutes until golden on edges but soft in the center.
  6. Immediately press coconut into indents and top with candy eggs before cooling completely.
