Ingredients

  • 1 cup shelled edamame (fresh or frozen)
  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • Pita chips or assorted veggies for serving

Instructions

  1. Cook the shelled edamame in boiling water for 5 minutes until tender. Drain and rinse under cold water.
  2. In a food processor, combine cooked edamame, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth.
  3. Adjust the consistency by adding water, one tablespoon at a time if needed.
  4. Taste and adjust seasoning as desired.
  5. Spoon the hummus into small cups or bowls and garnish with olive oil and paprika if desired.
