- 1 cup dried chickpeas (soaked overnight)
- ½ cup flat-leaf parsley (chopped)
- 2 garlic cloves (minced)
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp salt
- 3 tbsp tahini
- 2 tbsp lemon juice
- Water (as needed for tahini sauce)
- 4 pocket-style pita bread
- Fresh vegetables (lettuce, tomatoes, cucumbers)
Instructions
- Soak the chickpeas overnight in water. Drain and rinse.
- In a food processor, blend soaked chickpeas, parsley, garlic, cumin, coriander, and salt until coarse.
- Form small balls or patties with the mixture using wet hands.
- Heat oil in a frying pan over medium-high heat. Fry falafel until golden brown on all sides (about 3 minutes each side) or bake at 400°F (200°C) for about 20 minutes until crispy.
- For tahini sauce, whisk together tahini paste, lemon juice, and water until smooth; adjust consistency as desired.
- Stuff pitas with falafel and fresh veggies. Drizzle with tahini sauce before serving.
