- 1 cup green or brown lentils (cooked)
- 1 cup chopped walnuts (toasted)
- 1 cup dried figs (chopped)
- 1 medium onion (finely chopped)
- 3 garlic cloves (minced)
- 1 cup whole grain or gluten-free breadcrumbs
- 1 cup vegetable broth
- 2 tbsp fresh herbs (thyme or rosemary)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a saucepan, combine cooked lentils and vegetable broth; bring to a boil, then simmer for 20-25 minutes until tender.
- Sauté onions and garlic in olive oil over medium heat until soft, about 5 minutes.
- In a mixing bowl, combine cooked lentils, sautéed onions and garlic, chopped walnuts, dried figs, breadcrumbs, herbs, salt, and pepper.
- Transfer the mixture into the prepared loaf pan; press gently to pack.
- Bake for 40-45 minutes until golden brown; let cool slightly before slicing.
