- 4–6 tbsp ice water
Instructions
- In a large bowl, mix flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in granulated sugar, then add ice water gradually until the dough holds together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat your oven to 400°F (200°C).
- Toss sliced peaches with brown sugar and let sit while you roll out the dough on a floured surface into a roughly 12-inch circle.
- Transfer the dough to a parchment-lined baking sheet. Arrange peaches in the center, leaving a 2-inch border. Fold edges over peaches and brush with melted butter; sprinkle additional sugar on top.
- Bake for 35-40 minutes or until golden brown. Let cool slightly before slicing.
